Cucumber, mustard and coriander chilled soup
Soya cream alternative
½ bunch of fresh coriander
juice of one lemon
2 cloves of garlic
14 cl of Soya Cream alternative
20 g fine salt, freshly ground pepper
200 ml olive oil
2 tbsp Dijon mustard
Peel the cucumbers and dice them.
Peel the garlic, finely chop the coriander and squeeze the juice of one lemon.
In the bowl of the blender, pour the mustard, salt and pepper as well as the soya cream. Start blending at low speed, then pour the olive oil until you obtain a mayonnaise.
Add the cucumber cubes, the garlic and the lemon juice. Blend at a high speed: the mixture should be smooth and frothy.
Share out the soup into 4 recipients, sprinkle with coriander and add a drizzle of olive oil
