Courgette and Mint Velouté

Ingredients
- 4 courgettes
- 1 20 cl briquette of Soja cream
- 20 mint leaves
- Unrefined salt, pepper
Method
Wash the courgettes, cut them into pieces and steam for 15 minutes.
Put the courgettes, the Sojade cuisine and the 15 ground mint leaves in a blender. Blend until a very creamy velouté is obtained.
Salt and pepper to taste, give it another rapid blend.
Ladle the velouté onto plates and decorate with the remaining finely chopped mint leaves.
